Green Smoothie

Vegan Breakfast Recipe

This green smoothie is packed with fiber, vitamin C and lutein (which may be good for eyesight). Keep frozen grapes in your freezer so you can whirl this up in a pinch for breakfast or for a healthy refresher any time of day.

Ingredients:

  • 1 cup chopped fresh pineapple, plus a pineapple wedge for garnish
  • 1 cup packed chopped kale (stems removed)
  • 1 cup frozen green grapes
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated fresh ginger
  • 1 teaspoon ground flaxseed
  • 1/2 cup water or milk
  • 1/2 teaspoon honey (optional)

Instructions:

  1. Combine all ingredients in a blender and blend until smooth.
  2. Pour into a glass and garnish with a pineapple wedge.
  3. Enjoy!

Tips:

  • For a thicker smoothie, add less water or milk.
  • For a sweeter smoothie, add more honey.
  • You can also add other ingredients to this smoothie, such as spinach, avocado, banana, or berries.
